More than 150 years ago baker from Prato, Antonio Mattei, created a recipe of almond cookies that played the leading role in Italian cuisine history and began a fresh chapter called “cantuccini”. Today cantuccini is a traditional Italian cookie and made of flour, sugar, oil and eggs with addition of almond, chocolate and dried fruit.
Dough for cantuccini is baked twice and then cookies are kept for 3-4 months. Cantuccini usually are served with drinks: dessert wine in Italy, coffee or black tea in America and Moscatel wine in Spain.
